I made this about a year ago, so I don't remember exactly what recipe I used. But, this makes a delicious chorizo-like meat thing, and you ought to try swapping it into your favorite chorizo dishes. I did korizo and egg tacos.
I'd reckon I started with about a pound of ground pork, and added 3 tablespoons of gochujang chili paste, along with the amount of finely minced garlic that feels right (3 or 4 cloves?), a tablespoon of paprika, half a tablespoon of salt, and a bunch of black pepper.
You mix all that together and let it sit in the fridge a couple hours, and then you can scramble it up and use it however you want.
